Banana Bread

This banana bread is extra moist and decadently good, with chocolate chips and nuts!

Ingredients
  

Dry ingredients
  • 1 1/2 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 cup sugar
Wet ingredients
  • 3 ripe bananas
  • 1/2 cup coconut milk
  • 1 lime, juiced
  • 1/2 cup butter, softened
  • 1 egg
  • 1 tsp vanilla extract
Additions
  • 1/2 to 1 cup chocolate chips dark
  • 1/2 to 1 cup chopped nuts pecans

Equipment

  • 1 stand-mixer with paddle attachment

Method
 

  1. Preheat the oven to 350℉.
  2. Line your 9x5 inch loaf pan with parchment paper.
  3. Combine bananas, coconut milk and lime juice by using a potato masher. Set aside.
  4. Combine flour, baking soda and baking powder in a bowl. Set aside.
  5. Cream butter and sugar using the stand mixer with the paddle attachment. Add egg and vanilla, and beat until smooth.
  6. At low speed, add half of the dry ingredients and half of the banana mixture until combined. Then, add the remaining flour and banana mixture until combined.
  7. At low speed, add the chocolate chips and the chopped nuts to the batter. Mix until they are included in the batter. Do not over mix.
  8. Pour the batter into the loaf pan.
  9. Bake for 1 hour and 20 minutes. When baked, remove the banana bread from the loaf pan and let cool on a cooling rack for at least an hour. Slice and enjoy!
