Dutch Pancakes (Pannekoeken)

This recipe is perfect for anyone looking for a savory AND sweet breakfast on the weekend.

Ingredients
  

  • 4 pats butter
  • 8 strips bacon
  • 8 strips brie
Batter
  • 1 tsp sugar
  • 1 pinch salt
  • 1 tsp vanilla
  • 2 eggs
  • 1 cup flour
  • 1 cup milk
  • ½ cup water

Method
 

  1. Combine all the ingredients in a hand-blender container.
  2. Using a hand-blender, blend all the ingredients until smooth. Set aside.
  3. Preheat the oven to 350℉.
  4. On an aluminum-lined baking sheet with a rack, place the strips of bacon on the rack. Put in the oven to bake for 12 minutes.
  5. Remove the bacon from the oven and rest aside. Turn the oven off.
  6. In a non-stick pan on medium-high heat, add a tbsp of butter. Once the butter is melted, add two strips of bacon. Add enough batter to the pan to cover the bottom and parts of the bacon strips. Cook until the batter has set.
    Once the batter has set, flip the pancake. Add two strips of brie on one half of the pancake, then fold the other half of the pancake over the brie. Cook for 2 minutes, then flip the pancake and cook for 2 minutes.
    On a parchment paper lined baking sheet, rest the pancake in the warm oven.
    Repeat the process 3 more times, to get 4 pancakes in total.
  7. Serve while the pancakes are warm, topped with maple syrup. Optional, you can add sunny side up eggs on top of a pancake before serving and drizzle with maple syrup.
