For decades, people have been arguing what type of breakfast is the best: savory or sweet. I am here today to stop the debate with the amazing twist that is dutch pancakes. They are both savory and sweet, able to satisfy anyone for breakfast. You HAVE to try these!


The story behind this recipe

As any foodie, I have been obsessed with Phil Rosenthal’s show on Netflix titled ‘Somebody Feed Phil’. I love how the show makes you travel through food. It is also amazing as I have discovered a bunch of new recipes to try and food to be inspired by. This dutch pancakes recipe being one of them.

In the latest season, Phil travels to Amsterdam. He goes to this tiny little restaurant where the owner is making pancakes in front of their customers. Funny enough, the owner doesn’t even like pancakes!

Phil then tries two kinds of pancakes, one of them inspiring this recipe. It was a very simple pancake, with bacon and brie, drizzled with honey. It looked so good in the episode that I turned to my partner and told him to add bacon and brie to our grocery list. The very next day, we were buying bacon and brie and I made these for the first time, and they were DE-LI-CIOUS.

I have tried to find the proper name for these, as you will find the puffy type of pancakes also titled ‘dutch pancakes’. So my dutch pancakes might not be totally authentic, but I tried to replicate (while making it my own) what I saw on the show.

For the longest time, I have loved mixing different flavours. I love a piece a chocolate with buttery popcorn. I love maple syrup on eggs (I know, very french Canadian of me). So when I make these for the first time, I fell in love. The batter has the tiniest bit of sugar, cooked with butter and bacon, and filled with melted brie cheese. To make it a proper breakfast, it needed eggs, so I topped mine with sunny side up eggs, then drizzled maple syrup all over. SO! GOOD!

Side note, I initially plated two of these pancakes with an egg on each, but my partner and I could only eat one. So it is great to invite people over for breakfast (underrated in my opinion), as this recipe makes 4 dutch pancakes.

Dutch Pancakes (Pannekoeken)

Ingredients
  

  • 4 pats butter
  • 8 strips bacon
  • 8 strips brie
Batter
  • 1 tsp sugar
  • 1 pinch salt
  • 1 tsp vanilla
  • 2 eggs
  • 1 cup flour
  • 1 cup milk
  • ½ cup water

Method
 

  1. Combine all the ingredients in a hand-blender container.
  2. Using a hand-blender, blend all the ingredients until smooth. Set aside.
  3. Preheat the oven to 350℉.
  4. On an aluminum-lined baking sheet with a rack, place the strips of bacon on the rack. Put in the oven to bake for 12 minutes.
  5. Remove the bacon from the oven and rest aside. Turn the oven off.
  6. In a non-stick pan on medium-high heat, add a tbsp of butter. Once the butter is melted, add two strips of bacon. Add enough batter to the pan to cover the bottom and parts of the bacon strips. Cook until the batter has set.
    Once the batter has set, flip the pancake. Add two strips of brie on one half of the pancake, then fold the other half of the pancake over the brie. Cook for 2 minutes, then flip the pancake and cook for 2 minutes.
    On a parchment paper lined baking sheet, rest the pancake in the warm oven.
    Repeat the process 3 more times, to get 4 pancakes in total.
  7. Serve while the pancakes are warm, topped with maple syrup. Optional, you can add sunny side up eggs on top of a pancake before serving and drizzle with maple syrup.
